Homemade rice paper rolls make such an awesome light dinner on hot summer days. They’re healthy, low in calories, and super easy to make! Plus, they’re also a wonderful appetizer for parties. CREAMY VEGAN ONE POT PASTA (ASIAN STYLE)

I absolutely LOVE pasta and I love quick and easy meals! So this Asian style vegan one pot pasta with coconut milk and red curry paste is absolutely perfect. It’s my new favorite meal for weeknight dinners. Easy, healthy, and so incredibly delicious and creamy. And you need only one pot to make it! This vegan one pot pasta really couldn’t be much easier. You just throw in all of the ingredients – including the uncooked pasta – and then cook it for about 15 minutes. This way it’s packed with flavor and it saves you lots of time and also dirty dishes. As all my recipes, it’s of course 100 % vegan. When I first tried one pot pasta, I was actually really skeptical. I mean it does sound a bit weird, doesn’t it? VEGAN DONUTS WITH CHOCOLATE GLAZE

Actually I’ve never been a big donut fan before I turned vegan. I’d always take muffins and cookies over donuts any time.  Mostly because I don’t like that a lot of them are super sweet. But now that I tried so many new things in the last couple of months, I thought what the heck why not just give vegan donuts a try. So I ended up with these delicious  donuts with chocolate glaze and hazelnuts. CAN YOU EAT DONUTS AS A VEGAN? Admittedly, it is a bit harder to eat donuts as a vegan, but you definitely can. The only thing that is actually harder as a vegan, is to get store-bought donuts. Store-bought donuts mostly contain milk, eggs and butter. Plus, the chocolate glaze often contains butter. Dunkin Donuts, for example, does not (yet) offer vegan donuts. However, they offer vegan bagels, muffins and hash browns. If you want to check their vegan options, have a look here. When I think of spaghetti with meatballs, the first thing that comes to my mind is the meatball scene in the Disney’s classic ” Lady and the Tramp” when Tramp takes out his Lady for a romantic dinner. I used to absolutely love meatballs, so of course I had to make a vegan version of this classic American-Italian dinner. And they turned out soooo good! WHY THIS RECIPE WORKS: Kidney beans, rolled oats, and ground sunflower seeds give these meatless meatballs an amazing texture. They keep their form and don’t crumble when being baked or cooked. However, do not expect them to have the exact same texture as real meatballs. You can serve the meatballs warm or cold. I like them even better when they’re cold because this way they have a firmer texture. The recipe is very budget-friendly. Especially if you use dried kidney beans and cook them yourself. HEALTHY CARROT CAKE (GLUTEN-FREE & VEGAN)

Not only did I create a delicious, fluffy, moist, and perfectly sweetened Carrot Cake, but I also whipped up a healthy “Cream Cheese” Frosting to go with it too! Well, technically I *blended* some soaked Cashews, Maple Syrup, and Lemon Juice together to make some creamy, dreamy goodness. Did you grow up on ramen?  I have to admit it was a guilty, savory, salty pleasure of mine up through college days but with this Spicy Ramen recipe – guilt no more.  We are going to take the super versatile ramen noodles, discard the seasoning packets and create Spicy Ramen, AKA an ace of a dinner that is healthier, budget friendly, unbelievably easy and SO slurp-worthy. I am still craving these Honey Chipotle Chicken Tacos.  And I will every single day until I devour them again.  Patrick was almost speechless as he gobbled chipolte taco after taco after chipotle taco.  Or in other words, we are both pretty much obsessed. And there is a lot to obsess about starting with the Bacon Honey Chipotle Chicken.  Heavens yes. LEMON BREAD

This is the BEST Lemon Bread out there, in my humble opinion.  It is the perfect balance of sweet citrus due to not 1, not 2 but 3 steps of sugar infused lemon! MOIST:  It is crazy moist without being oily from a combination of sour cream and vegetable oil and the lemon syrup seeping into the bread – more on that later. REAL LEMONS:  I use real lemons, and not just one part, the juice OR zest I use both. LEMON EXTRACT:  However, my friend I do not stop there, I also use lemon extract in both the bread and glaze, which delivers a concentrated lemon flavor that cannot be achieved in any way – so a massive concentration of lemon love.  You could say a Lemon love ‘trifecta’!  But I do not stop with the lemon trifecta. I am SO excited grilling season is finally here!  How did that happen again?  Warm weather, eating outdoors, fresh food, hardly any cleanup, grilling season is the best!  And I’m even more giddy over grilling season because now we can all fire up Asian Burgers, the Best Burgers, Korean Burgers and now these epic Hawaiian Burgers! This Hawaiian Burger recipe is an explosion of sweet, tangy spicy, cheesy, pineapple-y, creamy deliciousness.  In other words, this burger has it ALL.  Hawaiian Burgers have long been a favorite of mine at any burger joint and this one is every bit as delectable in my humble opinion (and SO easy to make too!). KENTUCKY BUTTER CAKE

Have you ever had the pleasure of devouring Kentucky Butter Cake?  I tragically ate my way through most of my life without tasting this bliss.  It wasn’t until my birthday a few years ago that I sunk my teeth into one of life’s culinary delights. If you aren’t familiar with Kentucky Butter Cake, is it is essentially a vanilla poke pound cake combined with a butter crunch cake. It was originally made by Nell Lewis in 1963 who entered it into a Pillsbury Bake-off contest in Missouri and won.  The recipe has since taken the internet world by storm. What sets Kentucky Butter Cake apart is the sweet butter vanilla sauce. You poke holes in the bottom of the cake while its still warm then the holes get filled with luscious sweet sauce. I keep a running bucket list of different types of food/recipes I want to make from Nashville Hot Chicken  – check –  to Beef Brisket – check – to Perfect Pot Roast – check to these Slow Cooker Ribs.  After making these Slow Cooker Barbecue Ribs, I am kicking myself for not rushing them to the top of the list sooner!  As in years and years sooner so I could have been chowing down on their juicy, tender, barbecue smothered bliss this whole time.  At least I made them three times in one week to partially make up for it. recipe mediterranean baked cod recipe with lemon and garlic INGREDIENTS 1.5 lb Cod fillet pieces (4–6 pieces) 5 garlic cloves, peeled and minced 1/4 cup chopped fresh parsley leaves Lemon Juice Mixture  5 tbsp fresh lemon juice 5 tbsp Private Reserve extra virgin olive oil 2 tbsp melted butter For Coating 1/3 cup all-purpose flour 1 tsp ground coriander  3/4 tsp sweet Spanish paprika 3/4 tsp ground cumin 3/4 tsp salt 1/2 tsp black pepper INSTRUCTIONS Preheat oven to 400 degrees F. Mix lemon juice, olive oil, and melted butter in a shallow bowl. Set aside In another shallow bowl, mix all-purpose flour, spices, salt and pepper. Set next to the lemon juice mixture. Pat fish fillet dry. Dip fish in the lemon juice mixture then dip in the flour mixture. Shake off excess flour. Green Pumpkin Pie Smoothies are my favorite smoothie, no question. I love all the spices, they aren’t too sweet, and I have green and orange vegetables checked off the list first thing in the morning. No need to wait for the fall to make this smoothie.  I make pumpkin recipes all year. Why lose out on this healthy and low calorie veggie just because it’s “seasonal?” Green smoothies are my favorite breakfast. I don’t like sitting down and spending time having breakfast while I am trying to start my day, but if I want to have veggies, I am limited in portable options. A smoothie is easy to digest, for those of us who aren’t really breakfast eaters, and packed full of nutrients to start the day on a good note. CHICKEN BROCCOLI CASSEROLE  INGREDIENTS 4 cups cooked and Shredded Chicken 2 tbsp olive oil 2 heads broccoli florets removed 10 cremini mushrooms sliced 1/2 small onion diced 1 cup chicken broth 1 recipe Vegan Alfredo Sauce salt and pepper to taste rosemary for garnish INSTRUCTIONS Make the Vegan Alfredo Sauce and set aside. This can also be made the day before and stored in the fridge. Preheat the oven to 400 degrees fahrenheit. Heat the olive oil in a large sauté pan over medium heat. Add the sliced mushrooms and diced onion and stir for 3 minutes. Add the broccoli florets (make sure they're in bite-sized pieces and not too large) and stir for another 3 minutes or until the broccoli is crisp-tender and bright green. Place the shredded chicken in a 9x13-inch casserole dish, covering the bottom. Add the sautéed mushrooms, onions and broccoli in a flat layer on top. SHEET PAN BALSAMIC BASIL CHICKEN CAULIFLOWER RICE BOWL Ingredients 2 cups riced cauliflower 3 cups broccoli florets 1 medium red onion 4 chicken breasts diced 1/4 cup balsamic vinegar salt & pepper to taste 1 tbsp minced garlic 1/8 cup fresh basil chopped Instructions Preheat oven to 400 degrees. Dice chicken into cubes. Spread them in a single layer on one side of your baking sheet. Add broccoli florets to baking sheet in a single layer beside your chicken. Cut any large florets in half or thirds. Slice red onion into strips. Spread in a single layer on baking sheet beside the broccoli. Add cauliflower rice to baking sheet beside the onion. (If you're ricing your own cauliflower just add florets to a high powered blender and blend until cauliflower has a rice or pearl-like consistency.)
