Our Lavender Gin and Tonic Punch is light and invigorating! It's normally enhanced and the excellent purple shading is from butterfly pea tea. Ingredients Yields: 12 (2.25 oz) JELL-O shots 12 (2.25 oz) plastic soufflé cups with lids 1 cup water 2 cups spiced apple cider 2 envelopes Knox unflavored gelatin 1 cup Crown Royal Apple Whiskey 1/2 cup Fireball cinnamon flavored whiskey (Optional) Whipped cream, for garnish Ground cinnamon, for garnish Instructions Add the water and apple cider to a large saucepan and bring to a boil over medium high heat. Remove from heat. Sprinkle the gelatin on top of the cider mixture and allow to sit for 2 minutes. Whisk until completely dissolved. Allow the cider mixture to cool down for an additional 5 minutes. Add both whiskeys and stir well to incorporate. Place the 12 plastic soufflé cups on a large plate or tray. Pour the apple cider gelatin mix into the cups, filling almost up to the top of each rim. INGREDIENTS Dry Mixture: 2 cups quick-cook oats (see notes on quick-cook vs. rolled) 1 tsp baking powder 1 tsp cinnamon ¼ tsp salt ⅓ cup packed brown sugar Wet Mixture: 2 cups nonfat milk 2 eggs ½ tbsp vanilla extract 3 tbsps honey 1½ tbsp melted butter 2 cups frozen mixed berries ¼ cup pecans, separated INSTRUCTIONS Preheat oven to 375 degrees. In a medium sized bowl, mix together the oats, baking powder, cinnamon, salt, and brown sugar. Set aside. In a seperate bowl whisk together the milk, eggs, vanilla, honey, and butter. Layer half the berries in a 2 quart baking dish and top evenly with the dry oat mixture. Pour on the wet mixture, then add the rest of the berries on top along with the roughly chopped pecans. Another thing I really love about this recipe is this homemade bbq sauce. It’s flavored just how I like. It’s lightly sweet and tangy, it’s rich and has good depth, and it’s slightly smokey with a little kick. The other great thing is that there will be extra sauce so you can grill chicken the next day and slather it with lots of this bbq sauce. When in a rush you can use some of your favorite bottled barbecue sauce but I highly highly recommend trying this homemade sauce when you’ve got the time. It’s so easy to throw together it’s just a bit of measuring and simmering. You want your ribs to be fall-off-the-bone tender. The crockpot is a great choice. BUT, how do you go from the ugly mess of the slow cooker to beautifully caramelized fall of the bone ribs? for 8 hours, you’ll get some fall-off-the-bone ribs, but they’ll be kind of funky and unappetizing. Some of my favorite food now, and have always been, chocolate, chocolate…and more chocolate. If you have as big of a sweet tooth as I do, you’re probably in the same boat. The good news for us is delicious chocolate is easier to come by than you might think on a keto diet. Of course we’re not talking Hershey’s Bars, or some of the other brands that are loaded with sugar…as low carb dieting becomes more and more popular, the options have been exploding. My personal favorites for no sugar added chocolate have stayed true to Lily’s Sweets and ChocZero. These chocolates tend to be on the pricier side, but they’re definitely worth it for battling your cravings. INGREDIENTS Cheesecake: 200 grams cream cheese 100 grams plain yogurt 100 milliliters heavy cream 30 grams sugar 2 tablespoons lemon juice 8 grams gelatin (combine with 30 milliliters water and let it sit for 5 minutes) Berry sauce: 80 grams strawberries 50 grams blueberries 50 grams raspberries 40 grams sugar 2 teaspoons lemon juice 2 grams gelatin (combine with 15 milliliters water and let it sit for 5 minutes) Crust: 150 grams biscuit 80 grams butter, melted Garnish: Blueberries INSTRUCTIONS Crush biscuit until it resembles coarse sand. Combine with melted butter and press into the bottom of a cake pan. Refrigerate until firm. Put the berries into a ziploc bag and smash into tiny bits with a rolling pin. Transfer to a bowl. Ingredients 2 1/2 cups chocolate graham cracker crumbs 1 stick of unsalted butter, melted 1 1/2 tbsp. sugar 1/4 cup unflavored powdered gelatin 2/3 cup water 16 oz. cream cheese at room temperature 2 cups white chocolate chips 14oz. can sweetened condensed milk 1 cup heavy whipping cream 1 pint fresh blueberries Instructions Mix the graham cracker crumbs, melted butter and sugar in a bowl. Press evenly into the bottom of a 9" spring-form pan. In a large bowl, melt the white chocolate at 30 second intervals, stirring well between each heating. When smooth, add the cream cheese and mix well with an electric mixer. Add sweetened condensed milk and beat until smooth. In a small saucepan, combine the water and gelatin. Let set for 1 minute, then gently heat on the stove-top until gelatin has dissolved. Stir gelatin into cream cheese mixture until thoroughly combined. Fold in heavy cream. Ingredients 1 1/2 cups finely crushed vanilla wafers 1/2 cup finely chopped pecans 1/4 cup Challenge butter , melted 17 vanilla wafers 2 ripe bananas, diced 1 ripe banana, mashed 1 tablespoon lemon juice 2-3 tablespoons light brown sugar 3 (8-ounce) packages Challenge cream cheese , softened 1 cup granulated sugar 3 large eggs 2 teaspoons vanilla extract whipped cream and vanilla wafers for garnish Instructions Preheat oven to 350 degrees. In a medium bowl, stir together crushed vanilla wafers, chopped pecans, and melted butter. Press into bottom of a greased 9-inch springform pan. Stand 17 vanilla wafers around edge of pan with rounded sides facing outward. Press them gently into the crust. In a small saucepan, combine bananas (both diced and mashed) and lemon juice. This jalapeno popper dip recipe is creamy, cheesy, spicy, loaded with bacon and totally addicting! It’s made with a blend of cream cheese, cheddar cheese, fresh jalapenos and bacon, then topped with crunchy breadcrumbs. Serve your popper dip with tortilla chips for the ultimate party snack. I love a cheesy hot dip, especially when I’m entertaining. I often serve pizza dip, Philly cheesesteak dip and this amazingly delicious jalapeno popper dip to my guests at gatherings. When I was in high school I got my first “real” job as a server at a Mexican restaurant.  It was a far cry from authentic Mexican, but I will say that’s where I was first introduced to jalapeno poppers, which were taken frozen from the freezer and deep-fried before serving them to guests.  Which, I’m guessing, is how basically most restaurant chains that serve jalapeno poppers operate.
